The Year of the Vegetable


This year I’ve decided to do something good for myself. I’m not uuuusually one to make resolutions, but this year it seemed fitting.

I need to eat better foods. I need to cook. I need to buy vegetables that aren’t frozen and actually eat all of them instead of tossing them in the trash two months later. So, 2014 is going to be The Year of the Vegetable. I’m going to choose one vegetable each month and make it four different ways (originally one per week, but I don’t need to limit myself by week).

I’m open to suggestions as I haven’t planned the year out yet, and I know you all probably have ideas! Go ahead, gimme ’em.

  1. I get lazy when it comes to incorporating vegetables in my meals. I usually chop up some cucumbers and tomatoes for salads, but I am getting sick of salad. Looking forward to being inspired 🙂

    1. Me too! One of the things I’ve actually been doing is getting those pasta.. I don’t know, mixes? Where they come with the pasta and the flavoring all in there. And then I heat up a bunch of frozen vegetables and throw them in, too. It’s lazy, yes, but it’s muuch tastier than salad. I think people forget that they can just add to those boxed options. Even that plain cous cous with pine nuts tastes better with some vegetables and feta.
